How to read our wine list

Two hundred bottles, arranged by where they are from rather than what they are made of. Here is why, and how to find your way around it.

The list runs to about two hundred bottles and it is organised by appellation, not by grape. Chablis sits with Meursault under Burgundy; Sancerre sits with Vouvray under the Loire. If you came looking for a chardonnay section, there is not one.

Why it is built that way

Because in France the place is the information. Two chardonnays from thirty miles apart taste nothing alike, and filing them together tells you the one thing that matters least about them. Once you know that Chablis is cold stone and Meursault is warm butter, the list starts reading like a map rather than a test.

The short way in

Tell your server what you are eating. That is not a polite formula, it is the actual method: the sauce decides the bottle far more often than the protein does. A béarnaise wants something with acid; a bordelaise wants something with tannin to meet it.

And if you do not want a project

Look at Au Verre. It is a much shorter argument for the same idea, and everything on it is there because it drinks well tonight.
